A snapshot of Sylvain’s holdings across the Luberon, “Panorama” Blanc is a complex mélange of seven different varieties: Vermentino and Grenache Blanc (30% each) from southwest-facing parcels on sandy soils comprise the majority, but Roussanne and Marsanne (15% combined), Ugni Blanc (10%), Viognier (10%), and Clairette (5%) all contribute to the final blend’s character as well. It undergoes a natural fermentation and ages for nine months—mostly in concrete with a small portion in well-used oak—before a gentle bottling. This wine is strikingly mineral, with notes of white grapefruit and dried thyme, and a lovely sense of concentration given its modest alcohol.
