This cuvée is a blend of wine from several sites scattered on the hilltop of Les Loges, specifically “La Côte”, and “Les Griottes”. These are some of the middle-aged vines of the estate averaging 35 years of age. Combined, this is a two hectare site on clay-limestone soil. Gaudry takes a no-nonsense approach to vinification and aging, seeking to spotlight the chiseled mineral character of Sauvignon Blanc grown in these soils. Alcoholic fermentation takes place in stainless steel without designer yeasts; malolactic fermentation does not occur, thereby allowing the wines to retain their linearity and cut; aging takes place on the fine lees; and the wines are gently bottled the summer following harvest.
