Bucking the traditional Champagne technique of adding still red wine to a blend in order to make a rosé, Fleury produces a pure saignée of Pinot Noir, always from a single vintage but not indicated as such on the label. Fermented and aged in stainless steel, this cuvée is disgorged after at least three years on its lees and given a minimal dosage, always determined through blind trials. Balancing measured vinosity with exuberant freshness, the Rosé de Saignée Extra Brut spotlights the lip-smacking nature of Pinot Noir from the Côte des Bar in its salinity and its dynamic juiciness.
