“Salvadi” (meaning “wild”) is Lara and Mattia’s ode to the unabashed delights of low-yielding Pinot Grigio produced with full-on extended skin contact. Sourced from 18-year-old vines in the silt-soiled and iron-rich Codis vineyard, the 2023 fermented in open-top tonneaux with a small portion of stems added back and nearly three weeks of maceration on the skins with occasional punch-downs, then spent a full year aging in tonneaux between two and eight years of age. Intensely spicy on the nose, with a prominent note of cardamom, “Salvadi” blossoms on the palate with penetrating flavors of licorice and dried strawberries, a well-measured clench of tannins contributing extra intensity. The 2023 completed malolactic fermentation and measures just 12.59% natural alcohol.
