The ancient Ciliegiolo variety, indigenous to Tuscany and Umbria, has a parent-offspring relationship with the far more commonly planted Sangiovese, and Maria Sole’s version of Ciliegiolo revels in the variety’s scrumptiousness. Fermented spontaneously and aged for one year in cement with no fining or filtration, it explodes with tangy black cherries, savory herbs, and a streak of appetite-stoking acidity, sharing a striking purity of fruit with the rest of her lineup.
