Touraize’s stunning Crémant du Jura is produced entirely from Chardonnay vines in the Les Moulins vineyard (which primarily produces a still white of the same name); it spends one year undergoing a proper élevage in old tonneaux, then 30 months sur latte before being disgorged without dosage. Weighing in at a modest 11% alcohol, it offers a super-expressive nose of white truffles and orchard fruits, a clean, bright palate that is still very Jura in its mineral thwomp, and a saline, clinging finish.
