For the wines of Closerie Saint Roc, which are separated by parcel based on soil type, the Amoreaus employ the same distinctive technique of "dynamization" they use for Le Puy's spellbinding top wine "Barthelemy".
Closerie Saint Roc’s “Les Sureaux” (“elderberry trees”) comes from a 2.2-hectare parcel of Merlot planted in starfish-studded limestone composed of 30% clay, 30% sand, and 40% silt, at an altitude between 80 and 100 meters. Fermented spontaneously in cement and aged 18 months in used 225-liter barrels with lees absorption through dynamization and no added sulfur, it is densely fruited yet elegant, offering a gentleness of spirit and a stunningly silken texture.
